Months ago, issue #604 was opened for this but was closed after it seems to me like the issue was misunderstood. Previous versions either remembered your last output folder, or had an option in Preferences for it. With iCloud Desktop and Documents, this can be annoying if you drop a 1gb movie into your desktop without realizing it and it syncs. It always reverts back to /Users//Desktop.
